Recipe: Mussels with White Wine Sauce

I went on a seafood diet for the week of Lent. One of the dishes I was able to cook was mussels in white wine sauce. Try this simple recipe which takes less than 20 minutes to make.

Ingredients:
2 tablespoon butter
quarter bulb garlic
1/2 cup of white wine (I used Riesling which was readily available inside my fridge) 
0.75 lb mussels

1. Clean the mussels with water.
2. In a saucepan, boil the white wine. Simmer and pour in the mussels in the saucepan. Cover for 10 minutes or until the mussels are wide open. Be careful not to overcook since the meat becomes rubbery.
3. Once cooked, drain out the wine and set aside the mussels.
4. In the same saucepan, melt the butter and then saute the garlic. With a laddle, scoop out half of the cooked wine and mix in with the garlic and butter. Pour this sauce on to the mussels.
